One of the most memorable smells from my early childhood, is the smell of microwave fudge. My mum would make this over school holidays when I was in primary school, together with peanut brittle. The whole house would smell like a bakery and it felt like forever waiting for the fudge to cool down. Something about the greyish weather triggered that memory for me today so of course I HAD to make some!
Here is a really easy recipe and I can vouch for the end result.
Ingredients
100g of margarine (aren’t you glad I didn’t say butter!)
1 tin of condensed milk
2 cups of castor sugar
1tsp of vanilla essence
AND
a very large bowl
Method
- Add the margarine, castor sugar and condensed milk to the bowl.
- Microwave for 2 minutes so that the margarine melts completely, then mix well.
- Microwave for a further 10 minutes, stirring every 30 seconds until the mixture turns a light shade of brown. Stay close to the microwave because it will boil over in a heartbeat! (trust me on this)
- Remove the bowl very carefully, then mix in the vanilla essence.
- Empty the fudge into a casserole dish and leave to cool.
- Try to cut the fudge into squares before it is completely cold to prevent cracking.
You can add desiccated coconut to the mix, cocoa, cranberries, pistachio, sea salt…whatever you like.
I prefer plain fudge with a bit of sprinkles for the girls.

Yay! It’s really super easy to make and I loved it! I didn’t get scolded for not adding more sprinkles to the kids side though 😜
